Authentic biangbiang noodles from China’s Shaanxi Province that will leave you speechless!
Biangbiang noodles, alternatively known as youpo chemian in Chinese, are a type of noodle popular in the cuisine of China’s Shaanxi Province. The noodles, touted as one of the “eight strange wonders of Shaanxi”, are described as being like a belt, owing to their thickness and length. The wide, chewy biang biang noodles are named for the sound made as a chef slaps and stretches the dough against the counter.
Xi’an Noodles serves these traditional hand-ripped noodles with the addition of ingredients like spicy cumin lamb, spicy tingly beef, stewed pork, and vegetables. The all-around well-done food has even earned us a spot on the list of Seattle’s 100 Best Restaurants.
